Hulk-Inspired Zucchini Pancakes

These Hulk-inspired green zucchini pancakes are super quick and easy to make! Kids will love the fun green color, and parents will love how easy they are to whip up. Whether you're serving them for breakfast or a snack, these pancakes are sure to become a favourite. Top them with your favourite berries or some yogurt!

Ingredients:

  • 1 WholesYum Baby Zucchini purée Heart

  • 2 bananas

  • 1 handful of spinach leaves (~3/4 cup)

  • 2 eggs

  • 1 tsp vanilla

  • 1 cup rolled oats

  • ½ tsp cinnamon

  • ½ tsp baking powder

  • 1 tbsp oil of choice for the pan

Instructions:

  1. Defrost the Wholesyum Baby zucchini heart in the microwave for 5 second increments until soft. 

  2. Add the thawed zucchini heart and all the ingredients, except the oil, to a blender. 

  3. Blend 30-45 seconds until smooth.

  4. Heat up a large frying pan or griddle on medium heat. Add oil of choice to pan. Once the oil has melted, spoon out 2 tbsp of batter onto pan.

  5. Cook 3-4 minutes each side, until lightly golden brown.

  6. Top with any of your favourite toppings!
