Back-to-School Apple Oat Bars

Back to school means back to routine for most. What helps my family take on the week is a little bit of meal prep, and having these healthy oat bars on hand is a lifesaver. They are perfect for my little ones' lunch for daycare and even something I add to my lunch. (For a quick, nutritious breakfast for the busy ones out there, add a slab of nut/seed butter on top and you’re good to go.)

Back-to-School Apple Oat Bars

Ingredients:

  • 8 Wholesyum Apple Hearts (1 cup)

  • 1 cup rolled oats

  • 1 cup ready oats

  • 2 tbsp chia seeds

  • 1 tbsp hemp seeds (optional)

  • ¼ cup melted butter or coconut oil

  • 1.5-2 tsp cinnamon

  • 1 tbsp honey or maple syrup

  • 1 egg

Instructions:

  1. Preheat oven to 375℃. Combine all dry ingredients together into a bowl.

  2. Microwave Wholesyum Apple Hearts in 5-second increments until soft and purée form.

  3. Mix wet ingredients with dry ingredients until combined.

  4. After lining a square 9x9 pan with parchment paper, scoop mixture into pan. Pat down until smooth and even. (about a half-inch thickness).

  5. Bake for 20-25 minutes until lightly browned.

  6. Once cooled, transfer onto a cutting board and cut into bar shape. Enjoy!

NOTE: It is important not to use honey for babies under 1 year old. Other sweeteners should be used, such as maple syrup.
