Cornmeal Mini Muffins: Grab and Go for Little Hands

Wholesyum Mini Muffin Recipe

Ingredients:

  • 4-6 Wholesyum Zuchnini Hearts

  • 1 cup cornmeal

  • 1 cup flour

  • 1 cup oat milk (or milk of choice, unsweetened)

  • 1/3 cup honey (or sweetener of choice)

  • 1/3 cup oil (vegetable, avocado or coconut)

  • 2 tsp baking powder

  • Optional: 1-2 tbsp hemp seeds and/or chia seeds for an extra boost

Instructions:

  1. Turn Up the Heat: Preheat your oven to 400 degrees.

  2. Mix it Up: Add all dry ingredients into a large mixing bowl and combine.

  3. Add the Magic: Place Wholesyum Zucchini Hearts into a microwave-safe container and microwave until they reach a purée texture (about 30 seconds). Add all wet ingredients to the dry and mix until smooth.

  4. Into the Oven: Scoop batter into a mini muffin pan and bake for 8-10 minutes until a toothpick comes out clean. Transfer to a cooling rack. Once completely cooled, place in an airtight container and store in the fridge for up to three days. Enjoy!

Note: Honey should not be used for babies under 1 year old. Other sweeteners, such as maple syrup, should be used instead.
