Butternut Squash Quinoa Egg Bites developed by Dietician Ali from the Toddler Kitchen

These Butternut Squash Quinoa Egg Bites are easy to make and use wholesome ingredients that come together for a delicious sweet and savoury flavour. Packed with protein and fiber, they’re perfect for lunches, meal prep, or an on-the-go bite. The butternut squash adds natural sweetness and a boost of vitamins, making these bites as nutritious as they are flavorful.

Ingredients

  • ½ cup uncooked quinoa (or 1.5 cups cooked)

  • 1 cup vegetable or chicken broth

  • 1 apple, peeled and grated

  • 1 cup WholesYum Baby Butternut Squash Puree Hearts (~5 hearts)

  • 1 cup grated cheddar cheese

  • ½ shallot, finely minced

  • 1 tbsp raisins, finely minced

  • ¼ tsp ground sage

  • 2 eggs

Directions

  1. Heat the oven to 400 degrees F. 

  2. Add the quinoa and the vegetable or chicken broth to a large pot or rice cooker. Cook the quinoa according to package directions.

  3. While the quinoa is cooking, peel and grate the apple. Remove excess moisture from the grated apple. Add to a large bowl.

  4. Heat up the WholesYum Baby puree hearts in the microwave for ~30-40 seconds until soft. Add to the bowl with the apple and stir to combine.

  5. Grate the cheddar cheese, mince the shallot and raisins. Add to the bowl along with the sage and stir to combine.

  6. Crack the eggs in a separate bowl and whisk together. Add to the main bowl and stir to combine.

  7. Once the quinoa is cooked, allow to cool slightly before adding to the bowl and then stir to combine all of the ingredients.

  8. Line a muffin pan with muffin liners or grease with some oil or butter. Scoop out 2-3 tablespoons into the muffin pan. Cook for approximately 15 minutes.
