Carrot, Apple & Ginger Fall Soup

This cozy fall soup blends carrots and apples with a hint of ginger and rosemary creating a warm, comforting dish. The WholesYum Baby apple purees add a touch of sweetness, and the carrots create a rich, bold colour. For a thicker texture, you can blend in soaked cashews. A nourishing, simple dish to enjoy on crisp autumn days.

Carrot, Apple & Ginger Fall Soup developed by Dietician Ali from the Toddler Kitchen

Ingredients:

  • 3 tbsps olive oil

  • ½ yellow onion (diced)

  • 1 inch piece of ginger (peeled and diced)

  • 1 clove garlic (finely diced)

  • 1 piece of rosemary (stem removed, dice leaves)

  • 1 lb carrots (peeled and chopped)

  • 1 cup (~5-6) WholesYum Baby apple puree hearts

  • 3 cups broth 

Option: If you want to make the soup a bit thicker, you can add 3/4 cup of soaked cashews and blend in. This can help little ones with scooping the soup!

Directions:

  1. Heat a large pot on medium-low heat and add the olive oil and onions. Saute the onions until translucent. 

  2. Add the ginger, garlic, rosemary and cook 3-4 minutes until fragrant.

  3. Add the carrots, apple puree hearts and broth. Bring to a boil and cook for ~8-10 minutes until the carrots soften.

  4. Add all the ingredients from the pot into a food processor or blender. Blend or puree until smooth. *Caution: You may need to blend in two batches depending on size. Allow for steam to escape through the top of the blender lid.

  5. Pour ingredients back into the same pot and simmer on low.

  6. Serve with some warm bread or crackers!
