Chocolate Beet Muffins: A Red Velvet Dupe!

When you’re craving a sweet treat but still want to pack in an extra veggie boost. Add some cream cheese frosting for the ultimate indulgence!

Wholesyum Chocolate Beet Muffins

Ingredients:

  • 4 Wholesyum Beet Hearts

  • ¼ cup of oil (vegetable, coconut, avocado)

  • ½ cup honey (or sweetener of choice)

  • 2 large eggs

  • ½ cup Greek yogurt

  • 2 tsp of vanilla extract

  • 1¼ cup of flour

  • ¼ cup unsweetened cocoa powder

  • 1 tsp baking powder

  • ½ tsp of baking soda

  • A pinch of salt

  • ¼ cup of chocolate chips

Instructions:

  1. Preheat the oven to 375 degrees and grease or line a muffin tin.

  2. Mix all wet ingredients in one bowl and dry ingredients in another. Combine ingredients together and mix only until combined; do not over-mix.

  3. Scoop batter evenly into muffin tins and bake for 16-18 minutes or until a toothpick comes out clean.

  4. Remove from the oven and let cool for 5 minutes before transferring onto cooling rack. Enjoy!

Note: Honey should not be used for babies under 1 year old. Other sweeteners, such as maple syrup, should be used instead.

Update: Meghan’s genius husband suggested adding cream cheese icing to these as they gave such a red velvet cupcake feel. It was an absolute hit and so delicious!
